Healthy Choc Chip Cookies

Ingredients
 1 1/2 cups almond meal/flour
 3 tablespoons extra virgin olive oil
 2 tablespoons honey
 1 teaspoon vanilla essence/extract
 1/4 teaspoon sea salt
 1/4 teaspoon baking powder
 40g quality dark chocolate

Preheat oven to 170˚C

Combine all ingredients except chocolate in a medium bowl and mix together using a fork. Add chocolate and mix to combine.

On a baking tray, measure approximately 1 heaped tablespoon of mixture, roll into a ball and lightly press down in centre. Bake for 10 – 15 minutes or until golden brown.
