Lemon, Cashew & Date Energy Balls

I love an easy and quick recipe.  And these little balls of yumminess only have 3 ingredients! They're sweet yet tangy and so very moreish. 

I prefer to call them "energy balls" due to the carbohydrates in the dates and the slow releasing energy from the fat found in the nuts. They also make a great meal prep recipe, but keep in mind whole fruit or nuts are always a better every day snacking option.

 140g raw cashews
 180g dried dates, pitted
 juice of 1 small, or 1/2 large lemon

Instructions

Add cashews and dates to a blender and blend until just combined. Add the lemon and pulse a few times then blend again (be careful not to over-blend or they become too sticky to handle). Roll into 10 - 12 balls and enjoy!
