Muesli Bites

I love that these yummy muesli bites have no added sweetener.  They’re purely sweetened by the whole foods - banana and dates.  This means the sweetness is accompanied by fibre rather than just being the sugar on its own.

Cook time: 10 mins
Total time: 15 mins
Yield: 8-10

Ingredients
 3/4 cup rolled oats
 1/2 cup dried dates, pitted and chopped
 1 small banana, mashed
 2 tablespoons Extra Virgin Olive Oil
 2 tablespoons sunflower seeds
 2 tablespoons pumpkin seeds
 optional: pinch of sea salt

Instructions

Preheat oven to 180˚C. Add all ingredients to a medium bowl and mix well with a fork.

Spread evenly onto a small baking tray and press down with a fork. Bake for 10 minutes then allow to cool, break into pieces and enjoy.

Store in fridge.
