Two Ingredient Cashew “Cookie”

This will be one of the quickest, easiest (and yummiest) 2 ingredient recipes you’ll ever make!

When I’m busy with uni and work (which less face it, is most of the time), I don’t have a lot of time to develop new recipes.  So I challenge myself to create something that takes less than 15 minutes and uses less than 5 ingredients.  And these raw "cookies"… are a product of that!

You can make this recipe into balls or you can flatten them into a “cookie” shape.  They’re also shelf stable so feel free to take them in your bag for a snack on the go.

Total time: 10 mins

Ingredients
 140 g Raw Unsalted Cashews
 180 g Pitted Dried Dates

Instructions

Add cashews to a blender and blend into a ‘flour’. Add the dates and blend until well combined.

Roll into approximately 8 – 10 balls, then flatten and mould into a cookie shape.
